Recipe ingredients I used.

The simple ingredients I used for this recipe were bacon strips, onion, cabbage, balsamic vinegar and brown sugar sweetener. Also salt and black pepper to season. Because we use the bacon fat to saute everything there is no need for extra oil or butter.

Bacon
I used a thick-sliced bacon because I wanted to have sturdy pieces to be noticeable with the rest of the dish. You can use any type that you want but if you can find thick, I would use that.

Green Cabbage and Onion
I used regular green cabbage but you could certainly make this with red, Napa or savoy cabbage. The green was just more accessible and held up well while sautéing. And while I used yellow onion you could use red onion and I think it would quite nice too.

Swerve Brown Sweetener and Balsamic Vinegar
I low Swerve brown sugar sweetener but if you don’t care about carbs you can use regular brown sugar. You are only using a tablespoon of it anyway. However I would not substitute the balsamic vinegar. It has much more flavor than apple cider or red wine vinegar.

How to make keto cabbage and bacon saute.

Step 1: Get out a large saute pan and heat to medium high heat. Add the bacon strips, then turn the heat down to medium. Cook the bacon to your liking. I like crispy bacon but my husband likes his chewy so I make mine somewhere in between.

Step 2: When it’s cooked to your liking, take the bacon pieces out of the pan and place on a few pieces of paper towels to absorb the excess bacon fat and to cool.

Step 3: Using the same pan with the bacon fat, heat to medium heat and add balsamic vinegar and brown sugar sweetener. Whisk to combine then add the onion and chopped cabbage. Season with salt and black pepper then mix well and cook until the cabbage has soften (about 10-15 minutes).

To quicken the cooking process you can also add the lid and take it off to stir every once in awhile. Cooking times may vary depending on how you cut your cabbage.

This simple keto side dish has a lot of flavor and can be eaten on its own for lunch or a light dinner. You can play around with how you chop the cabbage making it into more of a noodle shape if you want. Or use shredded for another texture. I just chop into bite size pieces in a square shape.
